Le Fournil de la Poule Rousse(Little Red Hen's Farm):

Simon is a farmer and a baker, located at the border between the counties of Haute­-Garonne and Ariège, based in a village called Sieuras. Besides growing his own cereals, he makes his own bread. He invited us over to his home and workplace to show us how to make our own bread, how to do good kneading, and to explain to us that the flour of the ancient wheat varieties he grows will never have the same boring taste as the wheat flower one can buy at the supermarket.
